Three Mushroom Three Cheese Frittata
Serves: 4
Ingredients 12 Eggs, stirred 4tbs Olive Oil ¼C Shiitake Mushrooms, sliced ¼C Oyster Mushrooms, torn into strips ¼C Portobellini Mushrooms, sliced ¼C Gruyere Cheese, shredded ¼C Old Cheddar Cheese, shredded ¼C Havarti, sliced into strips 1 small, Shallot, finely diced 1tbs Chives, chopped 1tbs Thyme, chopped Salt and Pepper to taste
Method Preheat the oven to 400F. Heat a nonstick, heavy bottomed, medium size frying pan to medium high. Sweat the shallots in the oil until translucent, add the mushrooms and fry until slightly browned, about 4 minutes. Add the herbs and salt and pepper and fry 1 minute longer, add the eggs all at once and sprinkle the gruyere, and cheddar evenly over the eggs, lay the strips of Havarti to cover evenly. Place the pan in the oven and bake until the eggs are set, about 6 or 7 minutes. Slide the frittata onto a cutting board and cut into wedges. Serve with a light salad.
