Commisso's Harissa
Chicken Shish Kebab

Serves: 4

Ingredients
16 Bamboo Skewers soaked in water overnight
4 Boneless, skinless Chicken Breasts cut into equal sized cubes
1 Large Red Pepper cut into cubes
1 Large Green Pepper cut into cubes
1 Sweet Vidalia onion cut into cubes
1 Fennel bulb cut into cubes
16 Cherry Tomatoes

Harissa
1 tbsp. Cumin Seeds
1 tbsp. Coriander Seeds
1 tbsp. Caraway Seeds
10 mint leaves, chopped
5 cloves garlic, chopped
1 Small cooking onion, chopped
5 tbsp. Tomato Paste
1 Red Chili, chopped, seeds included
5 Limes, Juice and zest
1/8 bunch Coriander, washed, chopped
Grape seed Oil
Salt and Pepper

Method for Harrissa
Heat a heavy bottomed pan and roast the seeds until they start to pop. Place the seeds into a spice grinder and grind them until fine.

Place the seeds and all other Harissa ingredients into a food processor and blitz while slowly adding enough grape seed oil to from a paste. Season the Harissa with salt and pepper.

Method for Shish Kebab
Place all of the Shish Kebab ingredients into a large bowl. Toss with the Harrissa until all of the ingredients are well coated. Leave to marinate up to one day or at least one hour.

Carefully, without stabbing yourself, skewer all of the ingredients onto the bamboo skewers making sure to get two of each ingredient on each skewer. Preheat the grill to medium. Place the skewers on the grill and cook until the chicken is done, about 10 minutes. Serve with aromatic rice like jasmine, or basmati.
