Grilled Pineapple Strawberry Gelato

Serves: 6

Ingredients
1 Large, ripe Pineapple, cleaned and cut into 1” slices
1 L Commisso’s Strawberry Gelato
6 Mint Sprigs

Marinade
1 Cup Dark Rum
½ Cup Dark Brown Sugar
1 tsp. Cinnamon
½ tsp. Nutmeg
½ tsp. Ground Star Anise

Method
Marinate the pineapple slices for 25 minutes, or up to 1 hour.

Take the slices out of the marinade and put the marinade into a small saucepan and reduce to one third over medium heat.

Preheat the grill to medium heat and clean it very well

Grill the pineapple slices until slightly caramelized and heated through.

Place two slices of pineapple in a shallow bowl and top with a scoop strawberry gelato and some of the reduced marinade. Garnish with a mint sprig if desired.
