Grilled Peaches
with Coconut Gelato

Serves: 4

Ingredients
2 large, ripe peaches split, with the stone removed
2tbs brown sugar
1 vanilla bean split and seeded, pod reserved for the marinade, or 1tsp vanilla extract
3tbs fresh squeezed lemon juice
1 star anise pod
1/2 cinnamon stick
3 allspice berries
3 cloves
1L Commissos Fresh Foods Original Recipe Coconut Gelato
100ml riesling Ice wine
4 mint leaves

Method
Marinate peaches for at least 1 hour up to 3 hours with all of the other ingredients.

Clean the grill extremely well, and preheat to high. Grill the peaches until caramelized on the flesh side only, about 5 minutes.

In four small ice cream bowls place 250ml coconut gelato each, top with a peach half and drizzle with the ice wine and place one mint leaf on the top of each peach.
