Commisso's Grilled Pizza

Serves: 4

Ingredients
425g Fresh Pizza Dough
100ml Olive oil
4 Slices Pingue Prosciutto sliced so thin you can read a newspaper through it
200g Buffalo milk mozzarella torn into thin strips
15 or so grape tomatoes sliced in half
5 Large Basil leaves torn into thin strips

Method
Clean the grill well and rub it lightly with olive oil. Preheat your grill to medium heat. Stretch the pizza dough by hand to about 6mm thickness, the shape is inconsequential, it should look rustic.

Lay the dough on the back side of a sheet pan, and rub it lightly with olive oil. Flip the dough onto the grill oil side down and rub the top lightly with olive oil, grill for approximately 5 minutes (keep your eye on this, it will burn very easily)

When the underside of the dough is nice and crispy, flip the dough over and rub the cooked side generously with more olive oil, lay down the prosciutto slices covering the entire pizza, follow with the cheese then the tomatoes. Close the lid of the grill and cook for 2 minutes. Carefully slide the pizza onto a cutting board and top immediately with the basil. Cut into wedges and enjoy!
