Chicken & Broccoli Stir Fry
with Hoisin & Orange

Serves: 4

Ingredients
1 lb. boneless, skinless, chicken breasts, cut into 1/2 inch strips
6 tbsp soy sauce
4 tbsp hoisin Sauce
2 tbsp honey
2 tbsp rice wine vinegar
1 tbsp toasted sesame oil
2 tbsp garlic, minced
1 3-inch Piece fresh ginger, peeled and minced
2 tbsp canola oil
4 cups broccoli florets, blanched, refreshed
2 large Carrots, 1/4-inch sliced diagonally and blanched, refreshed
2 cups Snow peas, trimmed
6 green onions, white part cut into 1-inch long pieces, green parts sliced thinly on the bias
1 red/yellow bell pepper, julienned
1 tbsp corn starch dissolved in 1/2 cup orange juice
1/4 cup toasted Cashews
2 tbsp sesame seeds

Method
Combine the chicken strips, soy sauce, hoisin sauce, honey, vinegar, sesame oil, minced garlic and ginger and marinate at room temperature for (15) min.

Heat the canola oil in a wok or large sauté pan. Use a slotted spoon to transfer the chicken to the pan, and reserve the marinade. Stir fry the chicken until cooked through, remove from the pan.

Add the broccoli, carrots, snow peas, white parts of onions and the bell peppers to the hot pan, continue stir frying until the vegetables are just tender but still crisp, about three (3) min.

Stir the corn starch mixture into the reserved marinade. Pour the marinade over the vegetables, add the chicken and stir fry until liquid boils and thickens slightly, about one (1) min.

Serve on top of steamed rice and garnish with the toasted cashews, sesame seeds and the green parts of the scallions.
