Chicken & Broccoli Stir Fry Serves: 4 Ingredients Method Heat the canola oil in a wok or large sauté pan. Use a slotted spoon to transfer the chicken to the pan, and reserve the marinade. Stir fry the chicken until cooked through, remove from the pan. Add the broccoli, carrots, snow peas, white parts of onions and the bell peppers to the hot pan, continue stir frying until the vegetables are just tender but still crisp, about three (3) min. Stir the corn starch mixture into the reserved marinade. Pour the marinade over the vegetables, add the chicken and stir fry until liquid boils and thickens slightly, about one (1) min. Serve on top of steamed rice and garnish with the toasted cashews, sesame seeds and the green parts of the scallions. |
